I am going to let you in on a little secret.
A cheap Manhattan ain't good, and a good Manhattan ain't cheap.
This is a cocktail where you really really have to pay attention to the ingredients. Skimp on anyone, and you'll end up with a watery mess only suited for 3am in a New Jersey dive bar (I should know having grown up in NJ).
There's a long story below, so the TL;DR version is we used the best stuff we could get our hands on.

New York is the greatest city in the world.
There I've said it. Don't argue, it really is the best.
There's nowhere more exciting, so classic, so magical. It's the only city I have ever been in where everytime you step out it's somehow familiar yet you still don't know where you might end up at 3am.
Now if New York is the greatest city on the planet, Jerez de la Frontera, the home of sherry, is the second. A sorta sleepy little town in southern Spain, where again, you might know the surroundings, but you never really know where the night will take you.
Stay with me, you'll see where I am going in a second.
It was idea of familiar and exciting at the same time was how we came about creating our Jerezano Manhattan.
We started in New York, Brooklyn to be precise, with New York Distilling Company's Ragtime Rye. Distilled in Brooklyn from rye grown in New York state, Ragtime Rye is bold, spicy, and rich, in all sense the perfect whiskey for a Manhattan.
Our choice of vermouth is where things start to get exciting. We've chosed Discarded Cascara Vermouth. Discarded uses the waste product of two industries, whisky and coffee, and turns it into one helluva tasty vermouth. The sherry that is used to season whisky barrels is the base of the vermouth (Jerez connection #1) and then they use the carscara berries from coffee to infuse a really rich fruitiness. It's unlike any other vermouth out there.
Now for Jerez connection #2, we added in just a bit of East India Solera Sherry. A blend of Pedro Ximenez and Oloroso sherry with intense dried fruit, raisin, burnt orange and nutty notes it brings another level of richness to this Manhattan. No watered down dive bar drink here.
A few dashes of Angostura and Regan's Orange bitters.
All in all, this is a classic Manhattan, but just a touch of excitement from the Jerez connection.
The only thing that could make this drink any better would be if you were actually drinking it in Manhattan, on the Hudson River Line.
