The Tres Chic Martini was born out of a love for classic cocktails and a newfound appreciation and resurgence of disco drinks.
The French Martini had long been a favourite, and I am sure we can all (some of us) remember the terrible oversweet iterations from the 90s. It was time for a modern twist.
Made with 58 Distillery British Wheat Vodka, which provides a smooth and creamy base for the drink.
To add some complexity and depth, Lillet Blanc is added, a wine-based aperitif with notes of citrus and honey.
The real star of the show, however, is the Giffard Framboise de Ronce. This liqueur is made with Tayberries, a cross between raspberries and wild blackberries and provides a burst of fruity sweetness that balances out the other flavours perfectly.
Of course, it must have pineapple juice, but to chic it up, we first clarified the pineapple juice. Clarifying the pineapple juice removes the pulp and leaves behind a crystal-clear liquid that adds a subtle tropical note to the drink without the thickness usually associated with pineapple.
A total 90's babe of a drink, with a hint of a makeover to bring it into the 2020s.

IDEAL
Pop the bag in the freezer ½ hour. Pour into a cocktail shaker with lots of ice. Shake until frothy, strain into a martini glass. Garnish with pineapple
IT'LL DO
Pour the room temperature cocktail over some tiny cloudy ice you have in that ice tray that came with your freezer. But seriously, for optimum enjoyment use more ice than you think is necessary.

This drink might go slushy in the freezer. Just leave it out a minute or two before pouring.
